Pinterest finds this week

We all know that we LOVE pinterest but sometimes we just pin the yummy things and never actually get around to trying them out. I saw this pin a couple weeks ago but finally made them this weekend. As Rachel Ray would say- YUM-O!

These were really easy to make and taste like Samoas. Yummy! The only thing that I did different from the recipe is I used a 13x9 pan and aluminum foil on the bottom of my pan. They still turned out really good! The recipe said that it makes 20 bars. I cut my pan into 3 rows and was able to get that many. They are really rich and chocolatey so you might want to reduce how big they are.

I've seen a lot of other yummy things on Pinterest lately. Has anyone else tried any recipes that they've pinned? I'd love to hear about it. Post a link and I might even try it myself!

I hope everyone has had a fabulous weekend. We enjoyed the cookout that we went to yesterday as well as the perfect fall day. My son was given a R/C car for his birthday last January and it has been forgotten in our closet for awhile. We brought it out yesterday and he had an absolute blast making it bounce around in the yard.

Has anyone else noticed the insane amount of acorns on the ground lately? I'm thinking I need to gather some up and make something with them. Not sure what though... Any ideas, links, or pictures?

Tomato Dill Bread

A lot of my fellow posters are blogging about their tomato crops coming in. I thought some of you might enjoy my Tomato Dill Bread recipe. It's from a Taste of Home cook book that I discovered a couple of years ago. This bread is absolutely D-E-V-I-N-E!

Tomato Dill Bread

Ingredients:
1 package active dry yeast (1/4 ounce)
2 tablespoons sugar
1/2 cup warm water (110 to 115 degrees)
1-1/2 cups chopped peeled tomatoes
2 tablespoons vegetable oil
1 tablespoon minced gresh parsley
1 tablespoon minced fresh dill
1 tablespoon minced fresh oregano
2 teaspoons salt
3-1/2 to 4-1/2 cups all purpose flour
3 tablespoons butter, melted

Directions:
1. In a large bowl, dissolve yeast and sugar in water; set aside. In a blender or food processor, puree tomatoes with oil, parsley, dill, oregano and salt. Add to yeast mixture. Add enough flour to make a smotth dough. Turn onto a floured surface, knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour.

2. Punch down and divide in half; shape into loaves. Place into two greased 8-in. x 4-in. x 2-in. loaf pans. Cover and let rise until doubled, about 1 hour.

3. Bake a 400 degrees for 15 minutes. Reduce heat to 350 degrees; bake for 25 minutes longer or until done. Brush with melted butter.


When I first looked at this recipe, my first thoughts were, "How the heck do you peel a tomato?"
It's actually really easy!
No, really, I promise it is!

First, set a pot of water to boil on the stove, you want it to be only about 1/2 of the way full.
When the water is boiling, place your tomatoes (with the ends cut out) into the water.
Count 15-30 seconds.
Use a mesh or slated spoon to lift the tomato out of the boiling water and place it into a bowl of cold water.
The skin will start to crack and will peel right off! 
Easy peasy!

Little boy cooks are the best!

Now that my son is 2 1/2, he really likes to help in the kitchen when Daddy or Mommy are cooking or baking. So, yesterday I was going to make a pineapple upside down cake (yummy, yummy) and I thought he would like to help. He was such a great help!!!!!

I started out trying to get him to just "help" .... he was not much for pretend though!

So I released a little bit of control (very hard for a teacher and mommy to do) and let him help me put the eggs in one at a time.

All 3 of the eggs...

He realized that we were adding pineapple to the pan..

So I naturally helped him to learn the fine art of sampling while baking!

He definitely learned that lesson very well! He had to continue sampling the cherries!

In the end he even got to stay up (way past his bed time) to try out his creation!
Yummy, yummy!
